In Nigeria, food knowledge is often passed down by word of mouth. Our parents meant well and many traditional practices actually work. This one is everywhere. People think once a food is natural it must spoil quickly, not true. Our ancestors preserved food without refrigerators. Drying fermentation smoking and proper storage were their tools. The real enemy of food is moisture and contamination not the absence of chemicals. When moisture is controlled and hygiene is respected natural food can last safely for months.

Truth: Natural foods can have good shelf life when processed and packaged properly.

Myth 2: All Preservatives Are Poison

Let’s be honest this belief has caused a lot of confusion. Not all preservatives are evil. Salt, vinegar, sugar, drying and fermentation are all preservatives and Nigerians have used them forever. The problem is not preservatives it is abuse and poor regulation.

Truth: There are natural and safe preservation methods that protect food without harming health.

Myth 3: Organic Food Has No Scientific Basis

Some people think organic food is just marketing for rich people. Organic practices reduce pesticide residues protect soil health and preserve nutrient quality. It is not magic it is controlled farming.

This one needs to rest! Packaging does not make food bad…poor processing does. Packaging protects food from moisture, oxygen and microbes. Without proper packaging even the best food will fail.

We have demonized taste for too long. Traditional Nigerian foods were rich flavorful and nourishing. Taste comes from quality ingredients and proper processing not just excess sugar or fat.

Truth: Good food can be healthy and still taste amazing.

Myth 7: Homemade Food Is Always Safe

Home cooked does not automatically mean safe. Poor water quality dirty utensils and improper storage can still contaminate food.

Truth: Food safety depends on hygiene not location.
